    About this recipe: Packed with veggies, this makes a great vegetarian meal that everyone will enjoy.

    Ingredients
    Serves: 6 

    • 500g farfalle pasta
    • 1 tablespoon (15ml) olive oil
    • 1/2 red onion, chopped
    • 4 cloves garlic, crushed
    • 2 courgette, chopped
    • 60g sliced fresh mushrooms
    • 1/2 red capsicum, cut into strips
    • 5 plum tomatoes, chopped
    • handful fresh basil leaves
    • 1 teaspoon dried oregano
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 4 tablespoons (60ml) olive oil
    • 1 cup grated parmesan cheese

    Directions

    1. Cook pasta according to package instructions and then drain.
    2. Heat 1 tablespoon olive oil in a large frying pan over medium heat.
    3. Add onion, garlic, courgette, mushrooms, capsicum and 1/2 the chopped tomatoes and cook until tender.
    4. Season with basil, oregano, salt and pepper.
    5. Add pasta and olive oil.
    6. Mix well, and heat through.
    7. Sprinkle with parmesan and remaining chopped tomatoes.
