Mango Papaya Salsa

    A delicious salsa that can be served with chicken or fish. Great on a warm summer day!

    Serves: 8 

    • 1 mango - peeled, seeded and diced
    • 1 papaya - peeled, seeded and diced
    • 1 large red bell pepper, seeded and diced
    • 1 avocado - peeled, pitted and diced
    • 1/2 sweet onion, peeled and diced
    • 2 tablespoons chopped fresh cilantro
    • 2 tablespoons balsamic vinegar
    • salt and pepper to taste

    Prep:15min  ›  Extra time:30min chilling  ›  Ready in:45min 

    1. In a medium bowl, mix mango, papaya, red bell pepper, avocado, sweet onion, cilantro, and balsamic vinegar. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes before serving.

    FANTASTIC! I LOVE this recipe! (I added tomato too & sautéed the majority of the onion) My husband and my 3 year old both couldn't get enough. We served this over 1 1/2 lb salmon the first night. Ate it on crackers with cream cheese as suggested by another user (mmmmm sooooo good!) for lunch the next day and finished it off on top of the Pico de Gallo Chicken Quesadillas from this site for dinner.
