Orange Nut Bread

    A quick bread with a tasty orange flavour. Perfect with your afternoon tea.

    Serves: 20 

    • 5 tablespoons fresh orange juice
    • boiling water
    • 1 tablespoon orange zest
    • 2 tablespoons melted butter
    • 1 teaspoon vanilla extract
    • 1 egg
    • 280g plain flour
    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 cup caster sugar
    • 60g chopped walnuts

    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Preheat oven to 180 C. Grease 3 to 4 mini loaf pans about 6cm x 12cm.
    2. Pour orange juice into a measuring cup and add enough boiling water to fill to 250ml.
    3. Pour into a bowl and add the zest, melted butter, vanilla, egg, flour, salt, baking powder, bicarbonate of soda, sugar and nuts. Stir well and pour batter into the prepared pans.
    4. Bake for 45 minutes or until a small skewer inserted, comes out clean and bread is nicely browned.

    Excellent! So easy to make. I did use splenda instead of white sugar, and margerine instead of shortening. I made it in one regular-size loaf pan and it was done baking in 25 minutes.
