Fruit Stacked English Muffins

    Served as a light, refreshing warm weather snack, or as an accompaniment to brunch, these English muffin, strawberry and pineapple treats are delicious.

    • 2 English muffins, split
    • 1 (8 ounce) container pineapple yogurt
    • 3/4 cup sliced fresh strawberries
    • 3/4 cup drained crushed pineapple

    1. Lightly toast the English muffin halves in a toaster. Spread each half with pineapple yogurt. Top each half with strawberries and pineapple. Serve while English muffins are still warm

    I love English muffins and I love fruit and yogurt but this combination just didn't do it for me. I used vanilla yogurt and fresh pineapple along with the fresh strawberries.     You could use pineapple flavored cream cheese instead of the yogurt.... My 3yr old didn't eat the english muffin.. just the fruit off the top...  -  25 May 2002  (Review from Allrecipes US | Canada)
