Clam Fritter Snacks

    These are the easiest clam snacks, excellent if you love seafood!!

    Serves: 4 

    • 1 (10 ounce) can minced clams, drained
    • 1 cup baking mix
    • 1 egg, beaten
    • 2 tablespoons vegetable oil

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Drain the clams. In a medium bowl, beat 1 egg and stir in the cup of baking mix and clams.
    2. In a medium skillet, heat the oil and fry the clams in pieces until golden brown. Drain on a plate lined with paper towels.

    I added a little bit of the reserved clam juice until the consistency was good.. otherwise it would have been too dry. Not a lot of flavor. Will try again and add some minced onions and salt and a dash of old bay seasoning.  -  18 Sep 2011  (Review from Allrecipes US | Canada)
