    About this recipe: If you're making mashed potatoes, make extra so you can make these the next day. Experiment with the basic recipe and add grated cheddar, chopped spring onions or bacon to the mixture.

    Serves: 6 

    • 4 tablespoons plain flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 155g (1 cup) mashed potatoes
    • 1 egg, beaten
    • vegetable oil for deep frying

    1. In a medium bowl, stir together the flour, baking powder and salt. Mix in the mashed potatoes and egg until well blended.
    2. Heat oil in a wok or deep fryer. Carefully drop the potato mixture by spoonfuls into the hot oil, and fry until golden brown, about 5 minutes. Remove from oil to drain on paper towels.
