Cheese Straws I

    This is a favorite Christmas recipe of my father's and husband's. It's fairly simple to do and tastes good.

    Makes: 36 

    • 1/2 cup butter, softened
    • 4 cups shredded Cheddar cheese
    • 2 cups all-purpose flour
    • 1 teaspoon salt
    • 1/4 teaspoon ground red pepper

    Prep:15min  ›  Cook:15min  ›  Extra time:30min  ›  Ready in:1hr 

    1. Preheat oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
    2. In a large bowl cream butter and cheese. Stir in flour and salt; mix well. On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into 2 inch strips and sprinkle with ground red pepper. Place strips on prepared cookie sheet(s) 1 1/2 inches apart.
    3. Bake in preheated oven for 10 to 15 minutes, or until crisp.

    I made this recipe last year and it turns out great. A couple of pointers though, 1) watch how much cayenne pepper you put in, a LITTLE goes a long way; and 2) instead of strips, I recommend a cookie gun. I use the small star disk and the pipped out string works out excellent.     Glorious!!! I added two spoons of COlmans mustard to really bring out the cheesy flavour but used SR flour instead of plain. They turned out more bready than straws but they were gorgeous  -  24 Sep 2011  (Review from Allrecipes UK | Ireland)


    I didn't really like this recipe, it asks for far too much cheese and butter, I can make a very generous bowlful with 150g cheese and 40g of butter.
