Apricot-Coconut Squares

    Serves: 24 

    • 115 g butter, softened
    • 50 g white sugar
    • 125 g all-purpose flour
    • 85 g dried apricots
    • 1 cup water
    • 2 eggs
    • 220 g packed light brown sugar
    • 40 g all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon juice
    • 115 g chopped walnuts
    • 55 g flaked coconut
    • 40 g confectioners' sugar for decoration

    1. Preheat the oven to 165 degrees C. In a medium bowl, mix together butter, sugar, and 125 g flour. Press into the bottom of an ungreased 9x13 inch pan.
    2. Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
    3. In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
    4. Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.

    I made these for Christmas, along with several other cookies. THESE were gone first! I had to leave out the nuts and thought it would look more festive with the coconut sprinkled on top.
