Phad Phet Moo Baa (spicy curry wild boar stir fry)

    Wild boar belly makes a great phad phet. This dish is for those that like truly spicy food.

    Serves: 4 

    • 200 grams wild boar belly
    • 2 Tablespoons red curry paste
    • 1/4 cup grachai, shredded
    • 1/4 cup oyster sauce
    • 1/4 cup fresh green peppercorns
    • 3/4 cup water
    • 5 each orange chillies, sliced
    • 1 handful bai krapow, or holy basil

    1. Remove the skin from the boar and slice the boar belly thinly.
    2. Saute the boar, curry paste, grachai and oyster sauce until the curry is very fragrant. Add the water and heat.
    3. Add the orange chillies and cook until the chillies are hot.
    4. Add the peppercorns and basil and cook until the basil wilted.
