    About this recipe: This is a great salad to take to a barbecue. All ingredients are approximate, so add more or less of any ingredient depending on your own taste.

    Ingredients
    Serves: 8 

    • 3 cucumbers, seeded and sliced
    • 250g feta cheese, crumbled
    • 150g black olives, pitted and sliced
    • 5 plum tomatoes, diced
    • 30g oil packed sun-dried tomatoes, drained, oil reserved, and chopped
    • 1/2 red onion, sliced

    1. In a large salad bowl, toss together the cucumber, feta cheese, olives, tomatoes, sun-dried tomatoes, 2 tablespoons reserved sun-dried tomato oil, and red onion. Chill until serving.

    Great, quick recipe, but I changed it a bit. I omitted the sun dried tomatoes, and just used olive oil, salt and freshly ground pepper for the dressing. I also chopped all ingredients for a nice texture and added fresh oregeno.  -  16 Feb 2002  (Review from Allrecipes US | Canada)

    This is the best greek salad recipe I've come across. Using Kalamata olives instead of black olives is a must though. Both my husband and I thought the sun-dried tomatoes really made this salad great. Next time I will toss the salad with a dash of oil and then sprinkle the feta cheese on top. The oil from the sun-dried tomatoes turned my feta cheese pink and took away from the appearance.     I didn't seed my cucumbers, and I added a tablespoon of good quality balsamic vinegar just to pick it up a little. This is exactly what a Mediterranean Greed Salad should taste like.  -  11 Sep 2004  (Review from Allrecipes US | Canada)
