About this recipe: Cook these on skewers and serve alongside steaks or salad. Any leftovers are great with crusty bread.


Serves: 6 

  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 1/2 cup coarsely chopped fresh Italian basil
  • 2 cloves garlic, crushed
  • 2 brinjals, thickly sliced
  • 2 red capsicums, cut into wide strips
  • 6 medium mushrooms, stems removed

  1. Whisk together oil, juice, basil and garlic in a medium bowl. Pour the marinade mixture over the vegetables in a large shallow dish. Cover and refrigerate for 1 hour.
  2. Preheat barbecue to high heat.
  3. Place vegetables directly on the barbecue or on skewers. Cook for 2 to 3 minutes each side, brushing frequently with the marinade, or until tender.
