    About this recipe: A quick and easy "fresh" fruit cake.

    Serves: 12 

    • 2 large mangoes, peeled, seed removed and sliced (reserve juices)
    • 400g can mixed fruit cocktail, drained
    • 2 tbs rum
    • 1 tsp ground cinnamon
    • 1 tsp ground nutmeg
    • 1 egg, beaten
    • 1 tsp vanilla essence
    • 1 cup (125g) plain flour
    • 1 tsp baking powder

    1. Combine mango slices, juice, fruit cocktail, rum and spices in a medium saucepan. Stir over low heat for 10 minutes or until hot. Remove from heat; cool.
    2. Preheat oven to 150 degrees C. Grease and flour a 20x10 cm loaf tin.
    3. Combine fruit mixture with egg and vanilla in a large bowl. Stir in the sifted flour and baking powder. Pour into prepared pan.
    4. Bake for 55 to 60 minutes, or until a wooden skewer inserted into the centre of the cake comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
