Malaysian Fried Chicken

    1 hour 5 mins

This is my mother's special, yet simple, recipe. Chicken marinated in garlic, oyster sauce and curry powder, then pan fried.

    68 people made this

    Serves: 4

    • 6 cloves garlic, chopped
    • 4 tablespoons oyster sauce
    • 2 tablespoons curry powder
    • 1,1.5Kg whole chicken, cut into pieces
    • 125ml (1/2 cup) vegetable oil

    Prep:10min  ›  Cook:25min  ›  Extra time:30min  ›  Ready in:1hr5min

    1. To marinate: In a non-porous glass dish or bowl, combine the garlic, oyster sauce and curry powder. Mix together. Add chicken pieces and turn to coat. Cover dish or bowl and refrigerate to marinate for at least 1/2 an hour.
    2. In a large frying pan, heat oil over medium high heat. Add marinated chicken (disposing of leftover marinade) and fry for 20 to 25 minutes or until chicken is crispy and brown and juices run clear.

This recipe is also good prepared with boneless chicken breasts, marinated overnight and then broiled.  -  14 Jun 2000  (Review from Allrecipes US | Canada)

This is one of the most delicious chicken recipes I've tasted! I used curry powder instead of curry paste, and added some rice and a little more salt to make it a main course meal. Very nice!  -  15 Nov 2001  (Review from Allrecipes US | Canada)

Delicious and easy. I followed recipe to the letter and it turned out great - only one word of advice - cook this on a day that you can keep windows open - I cooked it the day of NYC's blizzard this year - my house smelled of curry for five days since it was too cold to open the windows to air the house out! This recipe is a keeper though.  -  08 Mar 2003  (Review from Allrecipes US | Canada)
