Macaroni Salad

    This is my mother-in-law's recipe. It is deceptively easy and includes thinly sliced spring onions, celery and a bit of mayonnaise. Any small pasta shape such as penne, farfalle or shells can also be used.

    Serves: 10 

    • 1 (500g) packet macaroni
    • 1 spring onion, trimmed and sliced including some green tops
    • 6 large stalks celery, trimmed and chopped
    • 3 tablespoons mayonnaise
    • salt and pepper to taste

    1. Bring a large saucepan of lightly salted water to a boil. Add the macaroni and cook for 8 to 10 minutes or until al dente. Rinse under cold water and drain.
    2. In a large bowl, combine the macaroni, spring onions, celery, mayonnaise, salt and pepper together. Mix well, chill, and serve with sliced tomatoes.

    Excellent! No changes, just seasonal additions. Chopped zucchini, fresh snap peas, cucumber, green are limited by your imagination. I also learned on Cook Illustrated to add seasoning to ingredients and let sit a bit (1/2 hour) before mixing in the mayo. Seasonings absorb better to macaroni, instead of mayo.
