    About this recipe: My husband who loves Italian dishes was getting bored with the same ones, so I made this one day for dinner and the whole family loved it! I hope you will too!

    Ingredients
    Serves: 6 

    • 6 (100g) links hot Italian sausage
    • 1 large yellow onion, chopped
    • 1 red capsicum, seeded and diced
    • 1 green capsicum, seeded and diced
    • 1 (110g) can mushrooms, drained
    • 1 (450g) package penne pasta
    • 1/2 cup (125ml) Italian salad dressing
    • 1/4 cup (20g) grated Parmesan cheese for topping

    Directions
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Bring a large pot of water to a boil. Add penne pasta, and cook until tender, about 10 minutes. Drain.
    2. Place the Italian sausage links in a small skillet over medium heat. Cook, turning occasionally until firm and cooked through.
    3. In a separate larger skillet, combine the red and green capsicum, mushrooms, and Italian dressing. Cook and stir until the vegetables are tender, about 5 minutes. Slice the Italian sausages into rounds, and stir into the vegetables. Continue to cook and stir for another 5 minutes.
    4. To serve, place servings of pasta onto plates. Top with the sausage and vegetable mixture. Sprinkle liberally with Parmesan cheese.

    I tried this recipe for a pot luck dinner last night and it got rave reviews! I gave the recipe out to 2 different people.     I very cautious on the meals I prepare for my picky husband, but this is one dish he enjoyed! He came back for seconds and thirds. There is one or two things I would change though, I would add a little more italian dressing and intead of placing it over the pasta, I would combine it all and then add the parmesan cheese once you serve it onto the plates....     This was a great alternative the ho-hum of just sausage and peppers. I will be maikng this again only using more dressing and peppers..also next time I think I will try it with rice.
