Kids' Rainbow Jelly

    I know, it's a lot of work and cleaning up but it's great for a kid's birthday party because it has multiple layers of jelly, each a different flavour and colour. You can make it in a big pan or a glass bowl or in individual bowls.

    Serves: 12 

    • 1 (100g) packet EACH of
    • blackberry flavoured jelly
    • lime flavoured jelly
    • lemon flavoured jelly
    • orange flavoured jelly
    • pineapple flavoured jelly
    • strawberry flavoured jelly
    • Boiling water
    • 1 can (375 ml) evaporated milk

    Prep:1hr  ›  Extra time:2hr  ›  Ready in:3hr 

    1. In separate bowls, mix the blackberry, lime, orange, and strawberry flavoured jellies with 375ml (1,1/2 cups) boiling water each and let each cool to room temperature.
    2. In separate bowls, prepare the cherry, lemon, and orange or pineapple flavored jellies with 250ml (1 cup) boiling water and add 125ml (1/2 cup) evaporated milk when each cools to room temperature.
    3. Add the room temperature blackberry flavoured jelly to a 30x23cm pan (or similar sized bowl) and refrigerate until chilled. Follow with a layer of the lime, lemon, orange, pineapple, and strawberry jellies, allowing each layer to cool before adding the next.
    4. Chill until completely set.

    This is a fun salad to make and serve. I would suggest not fixing all of the jellos at the same time as they tend to "set up" slightly as they wait their turn to be added to the cooled mold. I "frost" my "jello cake" by thickening over heat 1 1/2 c. pineapple juice, 3 T. flour, 3/4 c. granulated sugar, & 3 T. butter. When this has cooled, whip 1 pint of whipping cream and fold into pineapple mixture. Spread over "jello cake". Enjoy!  -  30 Jul 2000  (Review from Allrecipes US | Canada)


    This is such a great idea and a hit at a dinner party. I mixed the jello with 1 cup of boiling water and then 1 cup of cold water so that it was at room temp. right away.     HINTS: I found it easiest to mix 1 pkg of gelatin w/ water at a time; aside from preventing the mix from setting as other reviews mentioned, this way you only dirty 1 bowl. It takes about 40 MINUTES for each layer to completely set, so there's plenty of time for the next mix to cool down but no need to get all the flavors ready at once. Make sure a layer has completely set before adding another; even if it seems pretty solid the force of pouring another layer on top can disrupt the previous layer. So also, pour gently, just in case. I made a "frosting" consisting of 2 c whipping cream, 2 t lemon rind & 1/4 c pineapple juice... turned out great!  -  02 Aug 2007  (Review from Allrecipes US | Canada)
