Basic Italian Biscotti

    This is about as basic a biscotti as you can make.

    Serves: 24 

    • 5 cups (625g) plain flour
    • 1 1/2 cups (180g) sifted icing sugar
    • 2 tablespoons baking powder
    • 1 cup (230g) shortening
    • 3 eggs
    • 1 tablespoon vanilla extract

    1. Sift flour and measure. Resift with sugar and baking powder onto a flat surface. Cut shortening into dry ingredients until mixture resembles coarse cornmeal.
    2. Make a well in flour and break eggs into it. Add vanilla, and knead dough well for about 5 minutes until it is smooth, adding a little more flour if dough seems to soft and sticky.
    3. Pinch off bits of dough about the size of an apricot, and form into desired shapes. Cookies may be baked as rings, strips, or in letters, such as S.
    4. Place 2.5cm apart on greased cookie tray and bake in hot 230 degrees C (450 degree F) oven for 10 minutes, until golden brown. Watch carefully, because they burn easily.

    A very bland and unflavorful, even for a biscotti. It lacks the cruncy texture that makes these dunking cookies so great with cappichinos. I have made many different kinds of biscotti, this was not what I concider a true biscotti.  -  23 Oct 2001  (Review from Allrecipes US | Canada)
