Babi Pongteh (Braised Pork with Salted Beans)
This Nonya braised pork dish is delicious eaten with rice. It also tastes good the next day when all the flavours have melded together. I also use the leftover meat and sauce for a sandwich using a baguette and garnish it with some chopped cilantro, tomatoes and cucumber. Yummy!

Place shallots and garlic in a blender and chop coarsely. Heat oil in pot and fry the chopped shallots and garlic with the cinnamon stick until slightly brown and fragrant.
Add the taucheo, sugar, dark soy sauce and stir. Add the meat and fry for about 5 minutes. Add water to cover the meat and bring to a boil, stirring occasionally.
After it boils, add the potatoes and some more water. Stir and cook covered over low heat until meat is tender. Check for seasoning and add more salt or sugar as required.
