About this recipe:This Chinese inspired cookie is unique in taste and texture. Crunchy Chow mein noodles mixed with Spanish peanuts and covered with melted butterscotch and chocolate chips makes a very satisfying cookie.
Place butterscotch morsels and chocolate chips in a Wok. Boil water in a 10 quart pot and place Wok over boiling water. Keep heat at medium until morsels are melted. Line 3 cookie sheets with wax paper or parchment paper while waiting for the mixture to melt completely. Make room for these cookie sheets in the refrigerator.
When mixture is completely melted, add Spanish peanuts making sure to coat them well with the butterscotch and chocolate mixture.
Add the Chow mein noodles making sure to coat them well with the butterscotch/chocolate mixture.
Using two tablespoons, scoop out a tablespoonful of the mixture and place on a waxed or parchment paper lined cookie sheet. Place the filled cookie sheet in the refrigerator for at least 10 minutes or until the cookie is cooled. Repeat process. Ready to eat when cooled completely.
