Toi's Gai Yang (Toi's Barbecued Chicken)

    2 hours 30 mins

I'm not entirely sure what style this technically falls into, Boran, Bangkok or Burmese, but we like it like this at our house, so I'll call it Toi's style. This is a great dish to make for a crowd of hungry kids (and adults), as it's easy to just keep barbecueing, once the coals are going.

    • 2 tablespoons whiskey
    • 120 ml coconut milk
    • 2 tablespoons fish sauce
    • 1 teaspoon salt
    • 2 teaspoons curry powder
    • 2 tablespoons sugar

    1. Put the chicken in a non-reactive marinating container.
    2. Mix the remaining ingredients to a strong tasting marinate. Taste and make sure it tastes a bit too strong for your liking. Adjust the seasonings according to whether you prefer more salty or sweet.
    3. Pour the marinate over the chicken, massage in well, cover container and leave in the fridge for at least 2 hours, preferably overnight.
    4. Grill the chicken over medium hot coals until browned and cooked thoroughly, about 30 minutes total. Serve right of the grill or at room temperature.
