You may buy already cleaned lotus roots in a package. If not, peel the skin off and slice into 0.5 cm (2.5 inch) thick. Put in a pot with water to cover, add 1 tablespoon vinegar cook for 20 minutes to avoid bitterness and drain in a colander.
Put ½ cup (125ml) water in a pot and add soya sauce, corn syrup and sugar. Cook over medium heat for 5 minutes until sugar is dissolve, add the cooked lotus roots. Keep mixing until no liquid is left, it will take about 15 minutes. Turn off the heat.
Add the sesame seeds and mix one more time.
