Chilled Soba Noodles with Sesame Chard

About this recipe: A simple noodle dish that can be served chilled or warm. I eat it chilled as a starter or snack.

Serves: 4 

  • 1 package soba noodles
  • 1 bundle rainbow or swiss chard, stems removed
  • 4 garlic cloves, minced
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon soy sauce
  • 1 1/2 teaspoon gomashio
  • 1 1/2 tablespoon olive oil

  1. Boil a pot of water and cook soba noodles according to instructions. Drain and set aside.
  2. Coarsely chop the chard leaves. Heat olive oil in pot and saute the garlic. Add the chard and saute until wilted. Season with the rice wine vinegar and soy sauce.
  3. Toss the noodles into the pot and sprinkle the gomashio liberally and mix well. Remove the noodles and chill or serve hot.


Gomashio is a mixture of fine sea salt and toasted sesame seed. If you can't find it in your store, you can make your own.
