Pork Leg with Vinegar and Ginger

About this recipe: This recipe was given to me by a friend. It is an excellent postpartum dish that is restorative and helps to get rid of wind after giving birth.

Serves: 4 

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, chopped
  • 1 pork leg, cleaned and chopped into bite-sized pieces
  • 300g ginger, peeled and smashed until juices are flowing
  • 250ml Chinkiang black vinegar
  • 1 tablespoon dark soya sauce
  • 1 tablespoon light soya sauce
  • 3 hardboiled eggs
  • sugar and salt

  1. In a large pot, heat the oil and add the garlic. Stir until fragrant.
  2. Add the pork and stir and cook until lightly browned, about 5 minutes. Add 800ml water, ginger, vinegar, soya sauces, eggs, and sugar and salt to taste.
  3. Simmer until the pork is tender, about 45 minutes, and serve with rice.
