Dom Jud (Plain Soup with pork)

    This dish is also known as Geng Jud (plain curry). This is a very simple soup that is great if you need a change from something spicy or if you are feeling ill.

    Serves: 4 

    • 1 teaspoon whole black peppercorns
    • 5 cloves garlic
    • 1 teaspoon salt
    • 1 litre pork stock, meat stock or water
    • 200 grams pork spareribs
    • 200 grams minced pork
    • 100 grams soft tofu
    • 2 handfuls bai dam lung (wild viny greens) or napa cabbage
    • to taste white soya sauce

    1. With a mortar and pestle, smash the black peppercorns, garlic and salt. Place the paste in a soup pot with the stock and spareribs. Cook until the spareribs are almost tender, about 30 minutes.
    2. Add the tofu and bai dam lung. Wilt the leaves and season with the soya sauce. Serve in a communal or individual bowls.

    I'll write this review in the name of my daughter, who would love nothing more than to sit in a big (lukewarm) pot of this soup and eat it to her heart's content !
