    About this recipe: Ice-cold cheng tng on a hot day is my favorite thirst quencher. You can add lotus seeds (lianzi), pearl barley, or seaweed to the mix as well. The ingredients in cheng tng are also believed to make this drink a health tonic.

    Serves: 4 

    • 50g white fungus
    • 2 litres water
    • 50g fresh gingko nuts, peeled
    • 50g dried red dates
    • 50g jelly strips
    • 15 dried longans
    • rock sugar

    1. Soak the white fungus overnight. Break into smaller pieces.
    2. In a large pot, combine the water, gingko nuts, and red dates. Bring to a boil. Add the white fungus, jelly strips and longans and simmer for 30 minutes, until all the ingredients are soft.
    3. Add the rock sugar to taste and once it is completely dissolved, the cheng tng is ready to be served hot or cold.
