    About this recipe: When I want a quick meal, this egg and tomato combo is my go-to dish. I like to eat it alone with rice but you can pair it with a meat or vegetable dish as well.

    Serves: 2 

    • 4 eggs
    • 3 cloves garlic, chopped
    • salt
    • 3 tablespoons oil
    • 4 tomatoes, cut into 6-8 wedges

    1. Beat the eggs lightly and add 1 clove of garlic (chopped) and a dash of salt.
    2. In a wok, heat 2 tablespoons oil and stir in the egg mixture. Cook until it just sets. Remove and set aside.
    3. Add the remaining oil and garlic to the wok and fry the tomatoes until they start to wilt.
    4. Return the egg to the wok and mix everything together, stirring and cooking for a few more minutes. Season with salt to taste. Serve immediately.
