About this recipe:I have no idea who John is but this is a delicious breakfast or snack. My mum makes it with corned beef but you can use minced pork or beef as well. If you'd like some heat, add some sliced chillies to the egg mixture.
In a wide shallow bowl, mix the eggs, onion and corned beef. Season with salt and pepper to taste.
Heat about 2 tablespoons oil in a frying pan. Dip one side of each slice of bread into the egg mixture and gently place egg-side down into the pan. Repeat with as many slices as will fit. Press down with a spatula. When browned, flip to brown the other side.
Remove and drain on paper towels. Repeat until all the bread or egg mixture is finished. Serve hot.
