About this recipe: I love eating corn fritters as a snack or at a main meal together with rice, meat and veggies. This is my attempt to replicate my mum's fritters.

Pat Central Region, Singapore

Serves: 4 

  • 1 (400g) can cream-of-corn
  • 1 large egg
  • 100g plain flour
  • 100g cooked small prawns
  • 1 stalk spring onion, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 250ml oil for frying

  1. In a medium bowl, combine all the ingredients except the oil. Mix well until there are no more large lumps.
  2. In a large frying pan, heat the oil until shimmering. Pour about 4 tablespoons of batter into the hot oil to form a mound about 5cm across. Do not crowd the pan and work in batches.
  3. Cook until the fritters are golden brown on both sides, about 8 minutes, flipping halfway with a slotted spoon or spatula.
  4. Remove from the oil and drain on paper towels. Serve hot.
