Lemon and soya sauce-glazed chicken

    This is a simple teriyaki-like chicken dish that I fall back on when I'm tired or don't have time to prepare an elaborate meal.

    Serves: 4 

    • 4 cloves garlic, minced
    • 2cm piece ginger, grated
    • 3 tablespoons brown sugar
    • 2 tablespoons white sugar
    • 1/2 cup Japanese soya sauce (I like Kikkoman)
    • 2 tablespoons water
    • 1 large lemon, juiced
    • 8 bone-in chicken thighs

    1. Combine all the ingredients, except the chicken, in a large frying pan that can hold all the pieces in one layer. Heat over medium heat until the sugars dissolve.
    2. Add the chicken skin-side down and cook for 3 to 4 minutes.
    3. Reduce the heat to medium-low and simmer for 30 minutes, flipping halfway, or until the chicken is cooked through.
    4. Serve with rice and your favorite stir fried veggies.
