Sardine sandwiches

    This is one of the first things I learned to make in home economics class during secondary school. The sardine bones are soft enough to eat and are a great source of calcium, but you can remove them if desired.

    Ingredients
    Serves: 4 

    • 1 (425g) tin sardines in tomato sauce
    • 2 shallots, finely chopped
    • 2 chilli padi (or to taste), finely chopped
    • Salt and sugar to taste
    • 1 small lime, juiced
    • 8 slices white bread
    • Butter

    Directions

    1. In a medium bowl, mash the sardines including the bones, with the tomato sauce. Add the remaining ingredients except the bread and mix well.
    2. Spread the bread with butter followed by the sardine filling. Trim the edges if desired and cut into triangles.
