About this recipe: Crispy fried baby squid and chilli crab are two of Singapore's most popular seafood dishes. Go to any seafood restaurant and you'll find them on the menu.

Pat Central Region, Singapore

Serves: 8 

  • 2 cups oil for deep frying
  • 500g baby squid, patted dry with paper towels
  • 250ml (1 cup) sweet chilli sauce
  • 1 tablespoon dark soya sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt

Prep:5min  ›  Cook:20min  ›  Ready in:25min 

  1. In a large wok, heat the oil until smoking hot.
  2. Deep fry the baby squid until golden and drain on paper towels.
  3. Drain all but 2 tablespoons of oil from the wok. Heat the oil again and add the remaining ingredients. Stir well to combine.
  4. Return the fried squid to the wok and stir fry until they caramelise and become crispy.
