About this recipe: Serve this coconut rice with fresh mangoes or papayas.


Serves: 6 

  • 300g sticky rice
  • 500ml water
  • 250ml coconut cream
  • salt to taste

  1. Rinse uncooked rice in a colander for at least 2 minutes under plenty of cold running water.
  2. Combine rice, water, coconut creme, and salt in a small pan. Cover, and bring to a boil. Reduce heat to simmer, and cook until all liquid has been absorbed. Cook for 2 more minutes. The rice at the bottom of the pan may be a bit browned; that is good, and adds flavour.
