Hobak Jun (Pan fried Zucchini)

    This is a fun and easy starter or snack to make. It can easily be adjusted to make more or less depending on how many guests you may have.

    Serves: 2 

    • 1 medium zucchini
    • 1 1/4 teaspoon salt
    • 1/4 cup plain flour
    • 2 eggs
    • Dipping sauce
    • 2 tablespoons chopped green onions
    • 1 tablespoon (15ml) soya sauce
    • ¼ teaspoon vinegar
    • ¼ teaspoon sesame oil
    • ¼ teaspoon sesame seeds
    • Pinch of Korean red pepper powder

    1. Wash the zucchini and slice in 0.5cm (0.25 inch) thick rounds. Place on a big plate and sprinkle lightly with 1 teaspoon salt. Remove excess water.
    2. Whisk eggs and ¼ teaspoon salt in a small bowl.
    3. Coat the zucchini with flour and dip in beaten eggs. Place on a medium heated pan and cook for 5 minutes. Lower the heat to medium low and flip it over, press lightly and cook another 5 minutes.
    4. Place on a paper towel let it rest for 1 minute and serve with the dipping sauce.

    Following the recipe to a tee, the result was horribly salty. I'm sure it could have been delightful if I could have tasted zucchini or anything but salt.  -  29 May 2017  (Review from Allrecipes US | Canada)
