Nam Pla Wan (Sweet Fish Sauce)

    This dipping sauce for sour fruits is very addictive (for me). At least I know I’m also unabashedly snacking on healthy, vitamin-rich fruits, while I indulge in this possibly not too healthy sauce.

    Serves: 4 

    • 75 ml water
    • 75 ml fish sauce
    • 500 grams palm sugar
    • 3-4 big shallots, finely sliced
    • 5 tablespoons dried shrimp, ground
    • 3 bird eye’s chilies, finely sliced

    1. Heat the water, fish sauce and palm sugar in a heavy pot. Boil to a thick syrup over medium-low heat, stirring often to prevent it from sticking.
    2. Add the shallots and boil a few more minutes to cook them through.
    3. Remove the pot from the heat and add the dried shrimp powder and chilies.
    4. Serve with sour fruits such as green mangoes or granny smith apples.
