Spiced Apple Drink

    • 500g apples
    • 2.4 litres cold water
    • 250g sugar
    • 1 tablespoon ground ginger
    • 1 tablespoon ground cinnamon
    • 1/2 tablespoon whole cloves
    • 1/2 tablespoon allspice

    1. Wash the apples and grate them coarsely into a clean 2.4 litre wide-necked container. Add the apple cores and cold water. Put in a cool place for 1 week and stir once a day.
    2. Add the sugar and spices. Stir the liquid until the sugar has dissolved. Leave to stand for 1 day more, then strain the liquid through a muslin cloth. Syphon or pour the liquid into clean bottles.
    3. Lightly cork the bottles and leave them in a cool place for 1 week before drinking.
