    About this recipe: Get tropical with this mango-packed loaf enhanced with cinnamon and raisins. A wonderful summertime snack.

    Ingredients
    Serves: 20 

    • 250 g (2 cups) all-purpose flour
    • 9 g (2 tsp) ground cinnamon
    • 9 g (2 tsp) baking soda
    • 3 g (1/2 tsp) salt
    • 250 g (1 1/4 cup)s white sugar
    • 2 eggs
    • 180 ml (3/4) cup vegetable oil
    • 410 g (2 1/2 cups) mangoes, peeled, seeded and chopped
    • 5 ml (1 tsp) lemon juice
    • 35 g (1/4 cup) raisins

    Directions

    1. Combine all of the dry ingredients. Beat eggs with oil and add to flour mixture. Add mangoes, lemon and raisins.
    2. Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees F -175 degrees C (325 degrees F for glass pans) for about 60 minutes or until toothpick comes out clean.
