    About this recipe: A special version of scrambled eggs with smoked salmon and chopped parsley.

    Ingredients
    Serves: 2 

    • 2 slices bread
    • 15 g butter
    • 1 egg, beaten
    • 15 ml milk
    • freshly ground black pepper to taste
    • 45 g flaked or chopped smoked salmon

    Directions

    1. Heat butter in a medium saucepan over medium heat. Beat together egg, milk, salt and pepper and pour into the saucepan. Stirring constantly, cook eggs until light and fluffy.Take them off the heat just before you think they are done because they will keep cooking. Remove from heat. Stir in salmon.
    2. Slice toast into triangles and place, with points in toward the middle, around a plate. Spoon scrambled eggs into the centre, sprinkle over chopped parsley and serve warm.

    Very tasty! I followed the recipe as written, but I did add some dill weed (would have used fresh if I had some). Good and easy. Yes, as many reviewers state, cream cheese would be amazing (when is it not?!), but this is more healthy and still delicious!     This was a nice change from regular eggs! I added some sauteed mushrooms and baby spinach, to get some veggies in, and served on top of multi-grain English muffins. As others mentioned, a little cream cheese would have put this over the top! The one down side of this was really due to my own preferences - having never had smoked salmon before, I found it to be much more salty than I thought it would be.
