Sweet potato cooked in ginger syrup

    In this recipe, sweet potatoes are cooked in a ginger syrup to make a country style dessert.

    • 400 g sweet potatoes, peeled and cut into chunks
    • 1 litre (4 cups) water
    • 5 ginger slices, peeled
    • 220g palm sugar

    1. Place the sweet potatoes in the water and soak for 30 minutes.
    2. Remove the sweet potatoes, heat the water to a boil, then add the potatoes again. Add the ginger and cook the potatoes until they are tender. Add the sugar and dissolve.
    3. To serve, place the potatoes in individual bowls and spoon over the ginger syrup.
