Fluffy smoked flower cookies

    Thai cuisine has many snack sweets. These cookies are small and cute and are a great snack. After the cookies are made, they are smoked lightly with a special herbal candle that emits a heavy fragrant smoke. The candle is made specifically for this purpose and the aroma is unmistakable. This technique may sound unusual, but it gives the cookies depth that belies their simplicity.

    Serves: 8 

    • 240g plain flour
    • 170g caster sugar
    • 1 egg yolk
    • 125ml (1/2 cup) plus 1 tablespoon vegetable oil
    • 1 fragrant candle

    1. Preheat your oven to 150 degrees Celsius.
    2. Mix the plain flour and sugar together. Add the egg yolk and gradually knead in the vegetable oil until a crumbly dough forms.
    3. Roll the dough into 1 to 2cm balls. With a knife, cut the balls into 4 wedges. Place 3 of the wedges together to make a 3-pointed star, or a 3-petal flower. Roll the 4th wedge into a ball and place in the middle of the 3 wedges. Press and score the center ball to form the pistil of the flower. Repeat with remaining balls of dough.
    4. Place cookies on a baking pan and bake for about 12 minutes or until golden brown. Cool the cookies and place on a steamer tray.
    5. Light the fragrant candle and place in the bottom of the steamer. Smoke the cookies for 10 minutes.
    6. Store the cookies in an airtight container or serve right away.
