Crunchy coated peanuts

    This snack can be found pre-made but it is fun to make it at home. Make a big batch and keep it around to surprise your guests.

    Serves: 6 

    • 150g (1/2 cup) caster sugar
    • 125ml (1/2 cup) coconut milk
    • 2 teaspoon salt
    • 2 teaspoons sesame seeds
    • 1/2 cup rice flour
    • 300g (2 cups) raw peanuts
    • 500ml (2 cups) vegetable oil for frying

    1. Mix the sugar, coconut milk, salt, sesame seeds and rice flour until well mixed. Coat the peanuts in the coconut milk mixture.
    2. Heat the oil until hot, but not smoking.
    3. Frying the peanuts in batches, gently place the peanuts in the oil and fry until brown and crunchy. Drain on paper towels.
