Briefly boil the pork in water until cooked. Pour the pork water over the noodles through a strainer thus heating the noodles and mixing the noodles and pork at the same time. Reserve 4 tablespoons of the pork water.
In a bowl, mix the noodles and pork with the garlic, onion, chillies, Chinese celery, fish sauce, lime juice and tomatoes. If the salad needs more moisture, add the reserved pork boiling water. Taste and add more fish sauce and lime juice if necessary.
To serve, simply place on a serving plate and garnish with the coriander.
