Yam Neua (Spicy beef salad)

    This is a very easy and delicious salad to make. Who would have known that beef would be refreshing? For best results use a tender cut of beef, such as tenderloin, strip loin, flat iron or rib loin.

    Ingredients
    Serves: 4 

    • 300 g beef, tender cut such as tenderloin, strip loin, flat iron or rib loin
    • 2 teaspoons palm sugar
    • 3-4 tablespoons fish sauce
    • 2-3 limes, juiced
    • 10-15 chillies, sliced
    • 4 cloves garlic, chopped

    1. Grill the beef over charcoal until done to your liking. For this salad, it is best cooked until medium or rosy inside.
    2. While the beef is resting, mix together the palm sugar, fish sauce and lime juice. Slice the beef and toss with the dressing.
    3. Add the chillies and garlic and toss once more. Place on a platter and serve.
