Yam neua ma kheua prau (Beef salad with Thai brinjal)

    This is a refreshing beef salad that uses ma kheua prau, small green Thai brinjals, to add a bitter crunch. The beef is grilled, so it is best to use a tender cut such as flatiron, tenderloin or strip loin.

    • 70g salt
    • 10 ma kheua prau (Thai brinjal), cut into slices
    • 300 g beef, tender cut such as tenderloin, strip loin, flat iron or rib loin
    • 10 Thai chillies, smashed in a mortar
    • 1-2 teaspoons palm sugar
    • 3-4 tablespoons fish sauce
    • 2-3 limes, juiced
    • 1 stalk lemongrass, sliced thin
    • 2 stalks pak chi farang (culantro)
    • Handful of mint

    1. Dissolve the salt in water and place the brinjal in the water. This will keep the brinjal from oxidizing and will remove some of the bitterness.
    2. Grill the beef over charcoal until done to your liking. For this salad, it is best cooked until medium or rosy inside.
    3. Mix the chillies, sugar, fish sauce and lime juice together.
    4. Slice the beef and toss with the dressing. Add the brinjal, lemongrass and culantro and toss. Taste the salad and adjust seasonings if needed.
    5. Place on a platter, garnish with the mint and serve.
