    This delicious squid preparation is an excellent fresh and healthy side dish to dinner. Use fresh squid for the best texture and flavor.

    Serves: 4 

    • 400g squid, cleaned and washed
    • For the sauce
    • 10 Thai chillies, red or green, sliced
    • 5 cloves garlic, sliced
    • 2 teaspoons palm sugar
    • 2-3 tablespoons fish sauce
    • 2-3 limes, juiced
    • 1/4 cup Chinese celery leaves, chopped

    1. Prepare a steamer and heat over medium heat.
    2. Place the squid in the steamer and cook briefly until done, 3-5 minutes. Set the squid aside.
    3. For the sauce, mix all the sauce ingredients and taste. There should be a good balance between salty, sweet, spicy and sour. Adjust if necessary.
    4. Cut the squid into bite sized chunks and place in the center of a plate. Pour the sauce over the squid, garnish with the celery leaves and enjoy.
