This delicious squid preparation is an excellent fresh and healthy side dish to dinner. Use fresh squid for the best texture and flavor.

400g squid, cleaned and washed
For the sauce
10 Thai chillies, red or green, sliced
5 cloves garlic, sliced
2 teaspoons palm sugar
2-3 tablespoons fish sauce
2-3 limes, juiced
1/4 cup Chinese celery leaves, chopped
- Prepare a steamer and heat over medium heat.
- Place the squid in the steamer and cook briefly until done, 3-5 minutes. Set the squid aside.
- For the sauce, mix all the sauce ingredients and taste. There should be a good balance between salty, sweet, spicy and sour. Adjust if necessary.
- Cut the squid into bite sized chunks and place in the center of a plate. Pour the sauce over the squid, garnish with the celery leaves and enjoy.
