Nam Prik (Chilli sauce)

    Literally "chilli water," this sauce can be used to add zing to simple seafood preparations, such roasted fish or steamed shellfish.

    • 6 fresh Thai chillies
    • 2 kaffir lime leaves
    • 1 clove garlic
    • 1/2 teaspoon salt
    • 1/2 teaspoon sugar
    • 2 tablespoons fish sauce
    • 1 lime, juiced

    1. Pound the chillies, kaffir lime leaves, garlic, salt and sugar using a mortar and pestle until smooth. Mix in remaining ingredients.
    2. Serve in a communal dish or individual dishes to be spooned on simple roasted or steamed seafood, such grilled mackerel or steamed mussels.
