Nam prik too (Peanut chilli sauce)

    This simple chilli sauce is best paired with fried fish or roasted chicken. The peanuts add crunch and meatiness to the sour-sweetness of the sauce.

    Serves: 4 

    • 60ml water
    • 50g sugar
    • 1 tablespoon rice vinegar
    • 1 teaspoon roasted chilli flakes
    • 2 tablespoons chopped roasted peanuts
    • 2 tablespoons chopped coriander

    1. Put the water, sugar and vinegar into a small pot and heat until the sugar dissolves and boil for 5 minutes. Remove from heat.
    2. Add the chilli flakes and peanuts.
    3. When cool garnish the sauce with coriander. Serve in a small bowl paired with fried fish or roasted chicken.
