    About this recipe: This a fun and simple dessert to make. Kids especially love it as the banana and coconut come together to create a crowd pleaser.

    Ingredients
    Serves: 4 

    • 10 small bananas or 5 large bananas, peeled and smashed
    • 1 cup rice flour
    • 1/4 cup tapioca flour
    • 1/2 cup caster sugar
    • 1/2 teaspoon salt
    • 1/2 cup coconut milk
    • 3 cups fresh grated coconut

    Directions
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. In a large bowl, mix the bananas, rice flour, tapioca flour, sugar, salt, coconut milk and 2 1/2 cups fresh grated coconut.
    2. Place all in a baking tray and sprinkle the remainder of the coconut on top.
    3. Steam for 30 minutes in a steamer.
    4. Once cooked, turn out from the tray and serve hot or cold.
