    About this recipe: This is a savoury south Indian snack made with dhal that is shaped like a doughnut. It is popularly served during the festive holidays and also great for tea time. Vadai can be eaten by themselves or accompanied with coconut chutney or sambhar.

    Ingredients
    Serves: 8 

    • 1 cup black gram (urud dhal), soak for 40 minutes
    • 1 teaspoon cumin seeds
    • 1 onion, finely chopped
    • 1 or 2 green chillies, finely chopped
    • Salt to taste
    • 1/2 teaspoon bicarbonate of soda
    • Oil for deep frying

    1. Clean the dhal and drain. Place in blender and add a little water and blend until the dhal becomes a thick paste.
    2. Mix the rest of the ingredients with the paste and set aside for 5 minutes. Heat oil for deep frying until hot. Drop spoonfuls of the paste into hot oil and fry until it is brown and crispy. Serve hot.
