About this recipe: This is an easy Nonya chicken stew.

Serves: 8 

  • 1 1/2 kg chicken, cut into bite size pieces
  • 2 medium potatoes, cut into wedges
  • 1 cup (150 g) peas
  • 10 shallots
  • 4 cloves garlic
  • 2 tablespoons (30 ml) soya bean paste
  • 2 tablespoons (30 ml) thick soya sauce
  • 2 cups (500 ml) water
  • Salt to taste
  • Caster sugar to taste
  • Oil for cooking

  1. Fry the potato wedges until golden brown, drain and set aside.
  2. Blend the shallots and garlic together until fine, then mash the soya bean paste into the mixture. Heat a little oil in a pot and fry the blended ingredients until fragrant. Add the chicken pieces and stir fry for 5 minutes.
  3. Add soya sauce, water and sugar and bring to boil. Reduce heat and simmer until the chicken is tender. Add the potatoes, peas and salt and cook for another 2 minutes.
