Nasi Tomato (Tomato Rice)

    Ingredients
    Serves: 6 

    • 2 cups long grain rice, wash and drain
    • 2 tablespoon ghee
    • 2 star anise
    • 4 cm cinnamon stick
    • 3 cardamons
    • 2 cloves
    • 1 tablespoon tomato paste
    • 1 cup water
    • 1 tin evaporated milk
    • Salt to taste
    • Fried shallots for garnish
    • 2 stalks spring onions, chopped

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Heat ghee in pot and fry the spices until fragrant. Add in the water and bring to boil. When boiling, stir in the tomato paste, evaporated milk, a pinch of salt and add in rice. Lower heat and cook rice until done.
    2. Garnish with fried shallots and chopped spring onions.

    i had a very long and tiring day before i tried this recipe. The cooking process was so exciting! The aroma from the spices was just heavenly! I usually cook to relax, but this has taken that to an all new level. By the time I took a bite out of it, I was just so refreshed! that's the word for it: Refreshing!  -  02 Feb 2010
