Nasi Tomato (Tomato Rice)

About this recipe: A specialty rice dish to have for festive occasions.

Ingredients

Serves: 6 

  • 2 cups long grain rice, wash and drain
  • 2 tablespoon ghee
  • 2 star anise
  • 4 cm cinnamon stick
  • 3 cardamons
  • 2 cloves
  • 1 tablespoon tomato paste
  • 1 cup water
  • 1 tin evaporated milk
  • Salt to taste
  • Fried shallots for garnish
  • 2 stalks spring onions, chopped

Directions

Prep:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Heat ghee in pot and fry the spices until fragrant. Add in the water and bring to boil. When boiling, stir in the tomato paste, evaporated milk, a pinch of salt and add in rice. Lower heat and cook rice until done.
  2. Garnish with fried shallots and chopped spring onions.

i had a very long and tiring day before i tried this recipe. The cooking process was so exciting! The aroma from the spices was just heavenly!
